Mix nerigoma shiro with miso, soy sauce and rice vinegar to make simple sauce or dressing. Try this umami-rich sauce over tofu, as a marinade for white fish, or even as part of a salad dressing. Nerigoma shiro is a pure roasted white sesame paste that’s similar to tahini. The sesame seeds for nerigoma are roasted for much longer than with tahini, so the deep, nutty flavour is even more pronounced. You can also mix the white sesame paste with a little honey or sugar and use in desserts – try sesame ice cream, use as a macaron filling, or drizzle over fresh bananas and pancakes.
